BBQ Chicken Wraps

I made a roasted chicken that I wasn’t impressed with. So what to do with all the leftover meat?

I took all the leftover chicken, stripped it off the carcass, and shredded it. I combined that with:

  • a bottle of hickory BBQ sauce
  • 1 tsp Cayenne
  • 1/2 tsp Liquid smoke
  • 2 Tbsp white vinegar

I let that simmer for a while, and served it with sliced onion and lettuce to wrap it in (you could do it in rolls, but I wanted to go with a slightly healthier option).

It was delicious! Jesse and I got down and made a big, drippy, BBQ-y mess.

    Another option is hamburger buns or tortillas.

      Yes, yes. I reeeeally wanted to do it with big Kaiser rolls. But I also really didn’t want those extra 200+ calories that Kaiser roll was going to attach to my hips. So lettuce wraps it was! And God said… “damn, that’s some tasty chicken.”
