Brightened Couscous

Brightened Couscous
1 box plain couscous
Several Tbsp of lemon juice
A little butter
Salt
Lots of parsley
Cranberries
Slivered almonds, toasted
  • I used 1/3 to 1/2 cup of cranberries, soaked in hot water and run through the Cuisinart. Next time, like 1/4 to 1/5 cup of cranberries, chopped by hand.
  • Toasted almonds over the top were a HIT.
