Garlic Mashed Faux-Tatoes
- Toss in Cuisinart with 2 cloves chopped raw garlic.
- Blend till smooth.
- Add S & P and serve!
Jesse and I tried these and they’re fantastic, though next time we’re going to try it with less butter, fat free cream cheese, and low-fat yogurt instead.
Update: We tried 1 T butter, 2 T nutritional yeast, low fat plain yogurt (I found we needed a little less, too), added 1 more clove garlic, and left the cheese out. Just as delicious. I am starting to think this recipe can’t be ruined.
There needs to be more recipes like this. I love mashed potatoes, but it’s nice to see an option that’s low carb and low calorie. It’s so hard to be on a diet and lose weight with so many temptations! With stuff like this, I can feel like I’m being bad without breaking my low carb diet. 🙂
